In the early 20th century, the American food industry was a Wild West of unregulated additives and unsanitary practices. Consumers were at the mercy of unscrupulous manufacturers who often put profits before public health. But one man, a chemist named Harvey Washington Wiley, was determined to change that.

Wiley was born in Indiana in 1844 and studied chemistry at Purdue University. After graduating, he worked as a chemist for the United States Department of Agriculture (USDA). In 1883, he was appointed chief chemist of the USDA's Bureau of Chemistry.
